800 g beef

1 bone with marrow

2 poultry pulps

3 matching carrots

1 celery

1 pastarnac

1 parsley root

green parsley leaves

1 onion

3 l of water

2 tablespoons vinegar

Method of preparation

Put the meat and bone in boiling water with a little salt over low heat and, when it starts to boil, foam it.

Add the chopped chives and bring to a boil until the juice is reduced by about half. Strain soup and drizzle with egg, beat with a little soup and add it over the juice and put the vinegar.

At the end, put the chopped green parsley, salt and pepper to taste.
